Ingredients
- 2 large eggs
- 1 small onion, finely chopped
- 1 small tomato, finely chopped (seeds removed)
- 1 green chili, finely chopped (remove seeds for less heat)
- 2 tablespoons fresh coriander, chopped
- ¼ teaspoon turmeric
- ¼ teaspoon red chili powder
- Salt and black pepper to taste
- 1 teaspoon butter or oil
Instructions
- Beat the eggs: Crack eggs into a bowl. Add turmeric, chili powder, salt, and pepper. Whisk until combined.
- Add the fillings: Stir in onion, tomato, green chili, and coriander.
- Cook: Heat butter in a non-stick pan over medium heat. Pour in the egg mixture. Let it set on the bottom (about 1 minute), then fold in half. Cook 1-2 more minutes until done to your liking.
- Serve: Slide onto a plate. Serve with toasted bread, ketchup, or green chutney.
Tips
- Remove tomato seeds to prevent the omelette from getting watery.
- For an extra fluffy omelette, add 1 tablespoon of milk to the eggs when whisking.
- Make it a scrambled egg version by just stirring it all together in the pan — equally delicious!
