Indian Masala Omelette — Spicy Egg Omelette Recipe

The Indian Masala Omelette is street food at its finest. You’ll find it sizzling on roadside stalls across India — fluffy eggs loaded with onions, green chili, tomatoes, and coriander. It’s bold, flavourful, and comes together in 10 minutes flat. This is my quick fix on busy mornings.

Ingredients

  • 2 large eggs
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped (seeds removed)
  • 1 green chili, finely chopped (remove seeds for less heat)
  • 2 tablespoons fresh coriander, chopped
  • ¼ teaspoon turmeric
  • ¼ teaspoon red chili powder
  • Salt and black pepper to taste
  • 1 teaspoon butter or oil

Instructions

  1. Beat the eggs: Crack eggs into a bowl. Add turmeric, chili powder, salt, and pepper. Whisk until combined.
  2. Add the fillings: Stir in onion, tomato, green chili, and coriander.
  3. Cook: Heat butter in a non-stick pan over medium heat. Pour in the egg mixture. Let it set on the bottom (about 1 minute), then fold in half. Cook 1-2 more minutes until done to your liking.
  4. Serve: Slide onto a plate. Serve with toasted bread, ketchup, or green chutney.

Tips

  • Remove tomato seeds to prevent the omelette from getting watery.
  • For an extra fluffy omelette, add 1 tablespoon of milk to the eggs when whisking.
  • Make it a scrambled egg version by just stirring it all together in the pan — equally delicious!
